Running Ryzen in single channel and at that speed is really not good for it, and 16gbs is kind of a necessity in 2019

Kinda? You would have to use single slot cards to do it, as it would cover your front panel headers, your USB 3.0, etc with a dual slot card, but it should support sli, but it's really not worth it on this board.

I'm not positive yet. I'm thinking 16gb DDR4 G.Skill Ripjaws at 3200mhz as I don't think they will clash too badly with my colour pallet of my system

Actually it was cheaper at the time to get the one stick. Especially how its getting replaced anyway, I think 1 stick is fine
