I game, and also plan to do some editing. What would be best?

What type of editing? What programs? The specific workload changes the hardware recommendation significantly.

Adobe premier. IDK what kind of editing specifically, I plan on doing weird funny edits to post on youtube, and learning via online classes.

Premiere will actually run its best on an 8700K due to QuickSync, making it far faster than anything AMD has to offer and even beating more expensive X-Series processors, even if you pair them with a powerful GPU like the 1080 Ti. In this scenario I would reccomend an 8700K, but in most others I would go Ryzen.

The 8700k is probably the better balanced option for you. Premiere likes a combination of cores and single threaded performance for everything except exports/rendering.

Ryzen is still a very good option if you are constrained by budget. You lose some performance in Premiere and in some games, but it is cheaper and you would have faster exports.

2700X for sure. Threadripper is a content creation focused chip while 2700X is more for people who game more often. You can see by the price. IMO go with a 2700X and spend the extra money on a good monitor. I'd say 1440P 144Hz is good for that level.
