What's the difference of plugging a mouse or a keyboard on a PS/2 port instead of an USB port? Is there any advantage on doing so?

PS/2 keyboards have an advantage because the simultaneous release of any number of keys is possible only on a PS/2 port. This is known as n-key-rollover.

So using a PS/2 port for a mechanical keyboard would make it even better right?

Why and how is the PS/2 better than USB? And why do some mobos come with only one PS/2 port? Mouses don't get any improvement?

Mouses gain nothing really and it is just very old. Most motherboards have only one port, and soon I bet we will see no ports at all. With high end keyboards, they are designed with N-Key-rollover anyway so even with USB they are fine. In reality it makes no real difference at all with a mechanical board.
